Rawon

Rawon is a traditional Javanese dish from Indonesia, known for its rich and flavorful black beef soup. The distinctive black color of the soup is derived from the use of keluak nuts, which are boiled and processed to create a dark paste. This paste is then combined with various spices, including shallots, garlic, ginger, galangal, and turmeric, creating a flavorful base for the soup.

Apart from the unique spice blend, rawon typically includes tender pieces of beef, commonly brisket or chucks.

The soup is simmered with kaffir lime leaves and lemongrass until the meat is tender and infused with the aromatic spices.

Rawon is commonly served with steamed rice and is traditionally garnished with bean sprouts, lime leaves, green onions, and sometimes a boiled egg. It’s a beloved dish in Indonesian cuisine, celebrated for its deep, earthy flavors and cultural significance.
